They then undergo a cool pre maceration for three days in a cement vat. The fermentation process takes place without temperature control, with regular pump overs and punch downs, followed by a post maceration of 21 days. The wine is aged for 24 months in used French barriques. The scent is light and perfumed with nuances of dryness, smoke, violets,
